While the wolves are suppose to die along with their owners, I think Lady was different because she was quiet and obedient like how Sansa was trained to be since birth. But when Ned killed Lady, he also erased Sansa's perspective of what being a lady is like and that the prince she wants like in the fairy tales isn't real and she starts to rebel against what she was taught and slowly becomes a she wolf.
Killing Lady actually made Sansa into becoming her own person and not the lady her parents and society expected her to be.
